Foodie Pen Pal Reveal!

Today is Foodie Pen Pal Reveal Day! 
 This fun program involves foodie loving people sending and receiving packages of fun/yummy stuff each month. It is so much fun!

  I received my package from Alycia Pirc. And you can check out the Foodie package I sent to Lauren, at Hall Nesting. 

  Alycia did an awesome job at choosing fun and interesting foods!

 An Enchilada sauce and a Taco sauce from Frontera, which I have yet to use, but I know I will soon, I love Mexican food!
2 Fig Bar's, which I hadn't had before, but knew I would love, because I love Fig Newton's! And I did, they were delicious. I actually had the 2nd one today after my 6 mile run!
  Some yummy Tazo tea's, and then my favorite... Arnott's Cookies. They are "chocolate coated biscuits, with a chocolate cream center". WOW! Alycia lived in Australia for awhile, and these are only made there! They are insanely delicious!!

Black Cat Chase 5k Recap

Friday night I ran the Black Cat Chase for the 2nd year in a row.

  My girl, Charity, and I run this together. We have so much fun doing it, and we're already planning next years race outfit!
 We got together last weekend, had a fun sleepover with wine and subs and decorated our shirts! Nothing fancy, it's just a fun tradition!

  We got to the race about an hour early. My honey volunteered to be our photographer. Bless his heart, he froze! It was cold and rainy!

 The race started about 10 minutes late, which was annoying! We finally got started, there were 2000 people, so it was a very slow start.
It rained the whole time, but once I started running I warmed up quickly.
My stepson ran with us too. I love that he loves running races with me!

My time was 32 minutes. I was a little slower than usual because of the rain and being dark. But we did it!!

  We had a fun time! After the race we went to Panera Bread for some delicious cheesy broccoli soup, which warmed us all up!

 Yesterday morning was my 12 mile long run. My last one before my Half next Saturday! I was planning on running outside, but stepped out in the 43 degree weather, and decided to just run on my treadmill. I posted on my facebook about how I was a chicken when it comes to running in the cold! But my sweet friends encouraged me to just bundle up and run outside anyway! I mean, who wants to do 12 miles on a treadmill?!
  I realized I just need to push myself, step out of my comfort zone, and just do it! So, I did! And I'm SO glad I did! It was wonderful, and again, once I started running, I warmed right up! This whole weight loss/running journey has shown me I can do so much more than my brain thinks I can!

Crockpot Pumpkin

Everyone else is posting about pumpkins, so I thought I would too!
I went with my nieces, nephew and one of my daycare kiddos to the Pumpkin Patch! 
This is crazy, but I've never been to one before! It was so much fun!

They wanted to get the biggest pumpkins possible!
After getting home with my fabulous pumpkins, it was time to cook them! I decided to cook it in my crockpot. I love being able to throw something in there, and forgetting about it for awhile!

 Here's what I started with
 I put about 2 cups of water in the bottom of the crockpot.
Cut the pumpkin open, took out the seeds (don't throw them away!), and then cut the pumpkin into big chunks. I used a big serrated knife, you have to saw it back and forth, those things are hard!
 I cooked it on high for around 3 hours. Just until it's soft enough to remove the skins.
Then put it into the blender, and puree!
It was a small pumpkin, so this only made 3.5 cups. I put it into bags, and stuck it in the freezer, until I'm ready to cook with it, which will be soon!

As for those seeds, I made toasted pumpkin seeds from Allrecipes.
They were SO good! My honey and son just eat them up! (Of course I do too!)

Marathon Training Update: I can't believe I'm already on week 4!! Today I will run 6 miles. It's a beautiful day for it!

Giveaway Winners and my 10k!

Today I ran the Doug's Run 10k! It was a chilly morning, but it was perfect!
My time was 1:11. A little slower than I wanted, but the race was at the hilliest park in Louisville! It was cuhrazzeee! It was a little strange because they had no 'official' starting line. After parking, you walked about 1/2 mile to the start (which was weird), and then there was just a little sign on the side of the road that said "start". I got there a few minutes early, but no one else was there. Apparently you could just start running when you see the sign! It was a small race, maybe 75 runners, if that.
 After that I ran 5 more miles, so I could get in 11 for my long run today.
I skipped the hills for the last 5, and ran along this beautiful path!
Then I get back to my car....and I discover I'm locked out!! I had taken the key with me, but not the keychain that unlocks the car! It's my hunny's car, and I just assumed the key was all I needed. Who knew your car key wouldn't unlock your car doors? Not me!
So, I called my Knight in Shining Armor to come rescue me. Which he did.
Not my happy face!

It was definitely cold, while I waited! He was about 40 minutes away.
But then I came home and had some hot coffee, a hot shower and used this wonderful invention:

Birthday and Icecream!

Yesterday was my birthday! You know I'm still in my 20's!! Well...I feel like it anyway!!
My honey took me to Sake Blue, my FAVORITE Sushi restaurant. 

Oh, it was just heavenly!! If I could eat sushi and icecream everyday for the rest of my life, I would be a very happy girl. Well, happy and fat.
Then,  he took me to The Comfy Cow.
The yummiest, cutest icecream shop in Louisville! He really loves me!!
 I've only been twice, but it is soooo good!
And I didn't get a small scoop of fat free sorbet in a cup. I got a waffle cone with a scoop of peanutbrittlebrownsugar somethingoranother. Something that I'm just sure will be served in heaven!!

They have the cutest chandeliers too! Cupcakes with sprinkles! I'm sure I could find a room in my house for this!
 And by special request, I wore my cowgirl boots. :) Yes, they made me about 6'5.

Today I will run 4 miles, and then tomorrow run my 10k race, plus an extra 5 miles!

Cooking, Running and Baking!

First things first, I ran 5 miles this morning on my treadmill- NON STOP! The furthest I've ever ran nonstop, was 3 miles! I'm super excited about that!!
 I'm running Doug's 10k race on Saturday, so I'm going to PR at that too!

Now for the yummy part! Last night I made Thai Chicken Broccoli Wraps, from my Fitness Magazine.

  We didn't really like the soy sauce/peanut butter glaze. Next time I make it, I'll make some kind of teriyaki glaze for them. Of course, then they wouldn't be very "Thai"!

  I also made Weight Watchers Sweet Potato Crunch

Looks deelish, smelled deelish, but was just ok. My honey and I are not really sweet potato fans, but it looked so good and healthy, I wanted to try it. It got great reviews, so I'm sure if you like sweet potato's, you will love this! It was creamy and not too sweet. For the topping I used Apple Walnut Delight Granola, but you can use any type of granola. Only 2 points per serving.

Now for the SUPER yummy stuff!
 This morning I made Almond Butter Oat Balls, from Laura, at Mommyrunfast.
They are seriously GOOD! I ate one before I put them in the fridge to chill, and I will really have to stop myself from eating all of them! You could use peanut butter instead of almond, but since I'm in love with almond butter, I decided to use that. And you can add chocolate chips, which I'm sure would make them even more yummy! She has a lot of healthy cookie dough balls on her blog today, check them out! I can't wait to make some other variations!

Running Pop Quiz!

1. FUEL: Shot Bloks, GU, Energy Chews, Candy or Other?

2. Race Length: 5k, 10k, 1/2 Marathon, Marathon, Ultra or Other?

  So far my fave has been my 1/2 Marathon! I think it's the perfect distance!

3. Workout Bottoms: Skirts, Running Shorts, Capris, Pants or Other?

  Skirts! I only have one I regularly run in, I need more! I also have teal and red sparkle skirts, which I LOVE!

4. Sports Drink: Gatorade, Powerade, Cytomax, you stick to water when you run or Other?

  On my long runs, it's definitely Gatorade, but on shorter runs, I just drink water.

5. Running Temperatures: HEAT or COLD?

  Is NEITHER an option? I detest both! But, if I have to choose, I would say cold.
6. Running Shoe Brands: Suacony, Mizuno, Nike, Brookes, Asics or Other?

                        Brooks Pure Flow! I LOVE these babies! They are the secret to my success! :)

7. Pre-race meal: Oatmeal, Bagel, Banana, Eggs, Cereal or Other?

                                    Always a banana! Why?
                                I don't know, it's just what I do.

                                       Can't break tradition!

8. Rest Days: 1x per week, 2x per week, never ever ever or Other?

  I'm following a marathon training plan, so I rest 3 days a week, and run 4. I also do strength training 4-5 days a week. When I rest, I like to make silly duck faces with my hunny!

9. Music: Have to have it or go without it? 

  Always, always run with music! I don't know what I would do without it! Maybe I should try it sometime...

10. #1 reason for running: stress-relief, endorphins, you love to race, so you can eat all the cupcakes you want, weight-loss, love running for social reasons or Other?

  All of the above! My #1 is to lose weight and be healthy. But, it's just something I LOVE and I'm passionate about! I love pushing my body harder and doing more than I ever thought was possible! And of course I run so I can eat icecream!! ;)
My very first 5k race! Little did I know this was the beginning of an addiction!

Creamed Spinach and I'm not a dummy!!

I don't post about my love of cooking often enough, but behind running, my favorite thing in the world to do is to cook and bake! I like to find different and interesting recipes and try them out on my honey. (Poor man)
 My favorite thing to bake is desserts. But I rarely do, since I'm trying to lose weight, and those are my weakness! So, I found this recipe for creamed spinach...with tofu. Now, I've only had tofu once, and it was a disaster, with a capital D!! But, I wanted to give it another chance.
I started out with this...

And ended up with this!

I thought it tasted pretty good. My honey liked it, but he wanted me to make it like a spinach dip, so I added some shredded cheese to it. (No pic of that) Dip some baked pita chips in it, and it was deelish and healthy!

On another note...I got this book in the mail... 
I feel a little insulted, but whatev! If it teaches me what I need to know, to run this marathon, then I'll try to look past being called a dummy!

Question: Do you like tofu? If so, how do you use it? I need some more ideas!
