Cooking, Running and Baking!

First things first, I ran 5 miles this morning on my treadmill- NON STOP! The furthest I've ever ran nonstop, was 3 miles! I'm super excited about that!!
 I'm running Doug's 10k race on Saturday, so I'm going to PR at that too!

Now for the yummy part! Last night I made Thai Chicken Broccoli Wraps, from my Fitness Magazine.

  We didn't really like the soy sauce/peanut butter glaze. Next time I make it, I'll make some kind of teriyaki glaze for them. Of course, then they wouldn't be very "Thai"!


  I also made Weight Watchers Sweet Potato Crunch

Looks deelish, smelled deelish, but was just ok. My honey and I are not really sweet potato fans, but it looked so good and healthy, I wanted to try it. It got great reviews, so I'm sure if you like sweet potato's, you will love this! It was creamy and not too sweet. For the topping I used Apple Walnut Delight Granola, but you can use any type of granola. Only 2 points per serving.

Now for the SUPER yummy stuff!
 This morning I made Almond Butter Oat Balls, from Laura, at Mommyrunfast.
They are seriously GOOD! I ate one before I put them in the fridge to chill, and I will really have to stop myself from eating all of them! You could use peanut butter instead of almond, but since I'm in love with almond butter, I decided to use that. And you can add chocolate chips, which I'm sure would make them even more yummy! She has a lot of healthy cookie dough balls on her blog today, check them out! I can't wait to make some other variations!

  2. I LOVE sweet potatoes! They are the best!!
    I also love to make oat balls. I just dump together pb, molasses, dried cherries, pecans, almonds, walnuts, flax seeds, chia seeds, dried apricots, mini chocolate chips, oats, coconut, raisins and anything else I think sounds good! They are definitely my go-to fast snack!

I lost 115 pounds before I started running i/2 and full marathons and now am 5 months pregnant so I will be right back in teh loosing weight boat soon but just wnated to congradulate you on your weight loss and runnning success. I totally know how hard it can be. nice meeting you

    I was never a fan of sweet potatoes at Thanksgiving dinner, so would I be a fan of them prepared differently?

  13. NICE work on the 5 miles!! I so look forward to that day when I can do that. Longest I have ever run non-stop is 3 miles too and it was sooooo slooooowwww.... hehe.
    I love making balls! Almond butter is WAY better than PB in my opinion so I always get the big jar at Costco! ;-)
