Creamed Spinach and I'm not a dummy!!

I don't post about my love of cooking often enough, but behind running, my favorite thing in the world to do is to cook and bake! I like to find different and interesting recipes and try them out on my honey. (Poor man)
 My favorite thing to bake is desserts. But I rarely do, since I'm trying to lose weight, and those are my weakness! So, I found this recipe for creamed spinach...with tofu. Now, I've only had tofu once, and it was a disaster, with a capital D!! But, I wanted to give it another chance.
I started out with this...

And ended up with this!

I thought it tasted pretty good. My honey liked it, but he wanted me to make it like a spinach dip, so I added some shredded cheese to it. (No pic of that) Dip some baked pita chips in it, and it was deelish and healthy!

On another note...I got this book in the mail... 
I feel a little insulted, but whatev! If it teaches me what I need to know, to run this marathon, then I'll try to look past being called a dummy!

Question: Do you like tofu? If so, how do you use it? I need some more ideas!

    I have NO idea how to cook. I can microwave pretty good, ha! but I just can't cook worth anything. acchh.
    I'm half Taiwanese though, and my mom makes tofu a lot and I seriously love it!

    Definitely let us know if you like the book, I'm constantly looking for new running things to read.

  3. I have a delicious recipe for tofu cheesecake. I know it sounds weird but it is amazing and SO low fat/calorie and GOOD for you!! It's an amazing treat!!

    1. Well, I've also heard people add it to smoothies, and you can't even taste it. I'll have to test that out!

  6. Not a huge fan of tofu but kudos for trying it twice. Also I started reading the runners world big book of marathons and half marathon and have learned a ton! It might be a good second source.
