Crockpot Pumpkin

Everyone else is posting about pumpkins, so I thought I would too!
I went with my nieces, nephew and one of my daycare kiddos to the Pumpkin Patch! 
This is crazy, but I've never been to one before! It was so much fun!


They wanted to get the biggest pumpkins possible!
After getting home with my fabulous pumpkins, it was time to cook them! I decided to cook it in my crockpot. I love being able to throw something in there, and forgetting about it for awhile!

 Here's what I started with
 I put about 2 cups of water in the bottom of the crockpot.
Cut the pumpkin open, took out the seeds (don't throw them away!), and then cut the pumpkin into big chunks. I used a big serrated knife, you have to saw it back and forth, those things are hard!
 I cooked it on high for around 3 hours. Just until it's soft enough to remove the skins.
Then put it into the blender, and puree!
It was a small pumpkin, so this only made 3.5 cups. I put it into bags, and stuck it in the freezer, until I'm ready to cook with it, which will be soon!

As for those seeds, I made toasted pumpkin seeds from Allrecipes.
They were SO good! My honey and son just eat them up! (Of course I do too!)

Marathon Training Update: I can't believe I'm already on week 4!! Today I will run 6 miles. It's a beautiful day for it!

  4. Yea...pumpkinning is fun until you get cold ...then the pumpkins just feel so much heavier. Sams Club has a great box...and its warm...that is my new patch I frequent. ;-)

  7. I LOVE roasted pumpkin seeds! I am actually not a fan of pumpkin anything, but the seeds I do love :-)

    1. The seeds are awesome! I also love them with cinnamon too. There's so many different ways to make them!
