What I ate Wednesday #1

For the first time I am linking up with Jenn for What I ate Wednesday!

Last weekend Jeremy and I went to the Biltmore Mansion in Ashville, NC. It was absolutely beautiful!! I could totally live there.
 I'm going to share a few things I ate while there, and also some of the low carb dishes I've made lately. (I've been doing low carb lately, trying to lose some weight)

In Knoxville, TN we went to Cafe 4. I got maple pecan crusted salmon, brussels sprouts and cubed sweet potatoes. I am not joking when I say this is the BEST meal I've ever had. I hate brussels, but these were amazing. Who knew??!! I've already found the recipe for the salmon and can't wait to recreate it.
 In Asheville we went to a Japanese restaurant, and along with sushi, they also gave us a bowl of seaweed and squid. That was definitely a first for me. The seaweed was ok, and the squid wasn't too bad. But just knowing what it looked like alive, and I could not take more than one bite!

And of course...
Here are some delicious low carb meals I've made this week.
Zucchini Lasagna You HAVE to try this. Ridiculous!
Spaghetti squash chicken alfredo
Just as delicious as it looks!

  1. As a fellow runner and ice cream lover, the title of your blog caught my attention at WIAW! That zucchini lasagna looks awesome - will have to try ASAP!

  2. Oh Kathryn...your pics of your food will soon require a backup hard drive of their own if you keep on...So glad that I get to laugh at you...ooopppsss...I mean enjoy you for the rest of my days...You are still mine all mine!

  5. You are braver than I. I don't think I'd ever even try squid or seaweed! I have done a WIAW post in forever! Maybe next week. :-)

  6. that first picture... yum, and i dont even like salmon. and ew squid, i can eat calamari as long as i dont think about it too much but if they told me it was squid (even though it is) i cant eat it. i make no sense. anyway, that lasagna looks amazeballs, i have tried and failed at that type of dish before, this one looks simpler though, might give it a whirl!

    1. I did try calamari once too, but just couldn't do it!! I just can't help but think about it living and moving around! Lol! Totally make that lasagna girl! It really is easy. Let me know!

    1. Omg, we passed by that place a couple times and even talked about going in there, but we didn't. Now I wish we had!! Someone there recommended it too. Well, next time for sure!!

  9. I have never eaten squid...and can't imagine I ever will. You are brave! I am so not an adventurous eater!

  10. Seaweed salad is actually quite good, I like it a lot. Squid is good too, but I like just about anything that comes out of the sea.

    1. Yea, the salad wasn't too bad at all. I love fish and shrimp, but that's about it for seafood!

  11. You are far braver than me:) I could not eat squid, unless I was on the TV show survivor and it was eat or be eliminated, LOL
    I have received travel brochures about the Biltmore Mansion in NC, when I run a marathon in that state I'd love to stay at that hotel while I am visiting, even if only for a night or two:)
