Turkey day and a getaway

Happy Thanksgiving, my friends!

My day started with a 5 mile treadmill run. I was supposed to run a Turkey Trot this morning, but ended up skipping that and doing a treadmill run instead. :(
I watched a James Patterson movie on Netflix while I ran.
Excellent movie, but not so great to watch while you're running. Because it's hard to run and cry at the same time. But I succeeded.

This evening I will be having Thanksgiving with Jeremy's family and then bright and early tomorrow morning I will be taking off on a little getaway alone. I'll be going to one of my favorite places in Tennessee. I've already been looking for some running trails and I plan on doing lots of running, reading and praying. My goal is to come back refreshed, with some clarity and hope.

Happy Thanksgiving!!

Turkey Trot and Marathon training again!

This weekend I ran a Turkey Trot in my town. That was fun, I never run races in my own town! (They rarely have them here) It rained the whole time, but at least it wasn't cold.

In other news... today I started training for Marathon #5!

I'll be running the Asheville Marathon, in March. Jeremy and I went to the Biltmore this summer. I can't wait to run a race there!

So begins my training. Running funk or not, I've got to get out of it now!
I always use Runkeeper for my training, so that's what I'll be using again.

What race are you training for?
What did you do this weekend?

Runner's guilt, Runner's funk

Is runner's guilt a real thing? That's what I was wondering today, and I believe it is.

I think I have runner's guilt, because I'm in a running funk. I don't know what's wrong with me. Well, I do, but I guess they'd just be excuses.

My running lately has been horrible. I mean, embarrassingly horrible. As in, the past 6 months have been my slowest months. I did have an injury and had to take 6 weeks off. But I just haven't gotten back into it.

This time last year I was running over 80 miles every month. Well into the 90's. Of course I was training for a 100 mile race, but dang!! Lately my months have been in the 20's. The 20's!!

I still love running. I am passionate about it. Every time I finish a run, I am always so glad I did it. I love being a runner and I'm so proud that I am.

I've alluded a little bit to what's been going on in my personal life, and for over a year now it's been hard. Very hard. I feel like I'm at the bottom of a pit and my fingers are numb from trying to claw my way out.
To add to that, I can't find a job, I've gained weight, and it's freakin cold outside!

So, those are my excuses. They should make me WANT to get out and run, right?

Why do I feel guilty? Because I've let people down. Some people became my friend back when I was training for 100 miles, back when I ran 20 miles around a track, or 20 miles on my treadmill, back when I was an inspiration. That's the Katie they knew and liked.
Now when I'm discouraged and having a hard time, they're gone.

BUT, there is hope. I can see the light at the end of the tunnel, in regards to this running funk anyway. Why, you ask? I have 2 marathons next Spring, in March and April, and training starts Monday!

So I am determined to come out of this. No matter how I'm feeling. I will do this.

How do you get out of a funk?

Fall Soups- Butternut Squash Soup and Sweet Potato Lentils

Today I am linking up with Lean Lena for Tasty Tuesday!

One thing I love about Fall and Winter is making soups again. I always make them in my slow cooker, and that thing gets used at least once a week. (Best invention ever!)

Last week I made Butternut Squash Soup. It is a lot of work cutting up all the veggies, but it is so worth it! I used her recipe, but changed it a little bit for the slow cooker.

1 butternut squash; peeled, de-seeded, and cubed
2 carrots, cut in thick slices
1 med onion, cubed
2 gala apples, peeled, cored, and cubed
3 cloves of garlic
2 tbsp extra virgin olive oil
2 bay leaves
1 tsp dried thyme
1 tsp of dried sage
1/2 tsp salt
1/4 tsp white pepper
1 cup light cream
32 oz vegetable stock, pre-made or from scratch

Preheat oven to 425 degrees F. Toss squash, carrots, onion, apples, and garlic in large bowl with olive oil and the dried herbs. Spread them on a baking sheet lined with parchment paper or tin foil. Roast in oven for about 40 minutes, or until squash is tender and lightly browned. Remove from oven and place the vegetable mixture into crock pot.
Add your vegetable stock. Turn on low for 3-4 hours. When the vegetables are soft, puree the soup in a blender until smooth. You can add more vegetable stock if the soup is too thick. Stir in cream until thoroughly mixed and serve! This is soooo good.

A soup I made last night was Sweet Potato Lentils.
I was planning on making Lentils, and had a couple sweet potatoes. I'd never even heard of combining the two, but sure enough, I found a recipe for that!
I changed it a little bit to make it my own.

1 32oz container veggie broth
1.5 C water
1 (14.5oz) cans diced tomatoes
1 16oz package dried lentils, rinsed
2 sweet potatoes, cubed
2 carrots, sliced
3 stalks celery, sliced (didn't add these)
2 Tbsp cumin
1 tsp pepper
1 Tbsp cinnamon
1 Tbsp chili powder

Put everything into the slow cooker. Cook on low for 5 hours. (Depending on your crock pot)
I thought the cinnamon and chili powder was a strange combination, but wow, it was amazing!
What are some of your favorite fall soups?

I want my flip flops back!

Last night we got our first snow and the kids first snow day from school. We got 4 inches!
You'll never hear me complain about the summer heat- give me 100 degree days all summer. But you will hear me complain about the snow and the cold. I was not made for this!
I lived in Sarasota, FL for awhile, about 10 years ago. I often kick myself for ever leaving!!
Oh well, I'll try to keep my complaining to a minimum. :)
This is SO me!!
This weekend I ran the Indatus 5k, in Louisville. I knew it was going to be cold, but not that cold. A friend who was going to run with me cancelled because of the cold, so I was THISCLOSE to backing out too.
Then my Facebook friends came to the rescue! Everyone said I need to just do it. So, I did.
It was freezing, but I didn't even notice the cold when I was running. I wore 3 layers, a long sleeve shirt, a jacket and a vest- and that was perfect.

I had so much fun, I came home and signed up for the Turkey Trot 5k next Saturday!

Chestnut Praline Latte definitely warmed me up

Do you like running in the snow?

Three things Thursday

It's been awhile since I've done this, so here are three things from my week!

1. Turkey Pumpkin Chili
Pumpkin in chili? Who knew?! Hey, it's better than peanut butter in chili- yuk!! ;)
Lauren posted this recipe a few days ago, and it sounded so interesting, I had to try it. And she's right, you can't even taste the pumpkin, it just gives it a smoother flavor. Sooo deelish.
2. There is something I've been keeping from you guys. (Well, there's a lot of things- haha) I am back to looking for a job. Again. The patient coordinator job was just not a good fit for me. I was miserable, everyone else there was miserable, it was a horrible atmosphere- and was just not something I wanted to do.
I didn't tell anyone for a long time (friends or family), that I was no longer working there, because I just felt like an idiot, honestly.
So, I'm back to sending out my resume and going on interviews. Again.
Today I had an interview at a bank and it went really well. Hopefully I'll hear back from them next week! (I have experience in banking, so that's what I really want to get back into.)

3. THIS story! Please just take a few minutes and read it. It's an awesome story about my beautiful sister Charlotte, and her husband. The ending is just incredible.
Have you ever had pumpkin in chili?
What is your occupation?

Premier Protein Smoothies

My breakfast usually consists of something quick and easy. Usually I'll grab a granola bar and a banana, or if I have a few extra minutes, I'll make a smoothie with almond milk, frozen fruit and some protein powder.

So, when I was given the opportunity to try Premier Protein's Mixed Berry smoothies, I jumped on board.
I've tried many different protein powders, and a lot of them I can't even finish because the flavor is so bad. So I was pleasantly surprised with the taste and flavor of these. They taste similar to berry yogurt, are not chalky tasting at all. I am definitely a fan!!
It tasted SO good after my 10 mile run.
One 8.25 oz. container has 15 grams of protein, 140 calories, 5 grams of fiber, and is low in fat and has 24 vitamins and minerals. (And only 3 Weight Watchers points)
So grab some good energy with Premier Protein Mixed Berry Smoothies! These smoothies have the right mix of protein, carbs and fats to give your body a longer lasting source of energy.

Running under bridges

This weekend was the perfect weekend to run. Saturday was about 38 degrees and sunny. I started out with a couple layers and quickly took off one of them.
I ran 10 miles, and was actually in my car, leaving the park, when I saw these stairs. They were calling out for me to come and run them. I couldn't resist!
So, I parked and ran up and down these a couple times. I think I'm going to end every run this way from now on.
Am I the only one who sprints when running under a bridge? Maybe I'm just paranoid, but I always imagine the worst. :)
Friday night we celebrated my pretty Momma's birthday. She is so amazing. Someday I hope to be as wonderful a Mom as she is.
I don't love this race pic from last weeks 5k, but it's the first one I've seen in forever that's not hideous.
I was wearing as many layers as was freezing!!

Did you run this weekend?
Tell me I'm not the only one who runs fast under bridges?? ;)

SOS Rehydrate Winners and some sweet birthday presents

Did you guys watch this on Sunday?
Nik Wallenda is a daredevil, and this time he walked on a tightrope between two buildings in Chicago. He did it 2 times, the second time he was blindfolded!! I wasn't able to watch it live, I had to dvr it. But even when I watched it after he was done, I was holding my breath the whole time! Absolutely crazy.

Friday night one of the girls who had been in my daycare came to my house to trick or treat. She is the cutest little Cinderella ever!
My sweet fam (parents and siblings) had a big birthday party for the twinnie and me. Yay for presents!!

I can't wait to go shopping with all these gift cards! And that Vegettti...I have wanted one of those forever! I can't wait to try it.

Congrats to Christa and Sue for winning my SOS Rehydration packs! Ladies, please send me your address and I'll send it out to you.

Have you used a Veggetti? If so, any good recipes to share?

Girls Day Out 5k...that wasn't a 5k.

Saturday I ran the Girls Day Out 5k. It was freezing COLD.
I'm telling ya, it was hard to get out of my nice warm bed that morning. I was excited about running this race because when you cross the finish line, you get a $300 coupon booklet to shop, and free wine tasting!
This was the inaugural race, held at the new Outlet stores of the Bluegrass
Friday night I received an email saying that because of the weather, they were changing the parking, so we could be closer to the start line and wouldn't have as long of a walk. That was good news!

I got there early to pick up my packet. Again, very happy that they moved that inside too! I saw a few people I knew, so got to chat and stay warm until race time.
And then at 8:30, we were off! The course was through the parking lot, so it was nice and flat. It was marked pretty well, with signs saying stay to the left or right, if it was your first or second loop. There were a couple times it got kind of confusing and you really had to make sure you were going the right way.

I was really happy with my pace, the first 2 miles were under 11 min. miles. I knew this wasn't going to be a PR, but I knew it would still be great!

And then I saw this...
What?? Oh no, I made a wrong turn somewhere, I missed something, or didn't follow the right signs. I haven't even reached 3 miles yet!!
I'm sure my finish line photos show me stopped right before the finish, looking at my watch, looking around confused.
This can't be right!
I take my coupons and head back inside to where the wine tasting is. When I get in, I ask several other people if they noticed the course was short. I thought maybe it was just me.
Sure enough, everyone said the same thing- it was short. They were all disappointed and confused too.
The wine was good
Honestly, at that point I didn't even feel like taking pictures or shopping, so I just left.

When I got home, I posted on their FB page, asking about it. They did reply, which I appreciated. They said because of the parking change, that affected the course, so they had to shorten it.

Here's my question, WHY didn't they mention that in the email they sent out Friday? Or why couldn't they at least announce that Saturday morning, as they were making the other announcements??
THAT is what bothered me. Ok, you have to shorten the course, that sucks, but whatever. AT LEAST TELL US THAT. I felt cheated, and like they were hiding that from us, hoping no one would notice.

Apparently a lot of people didn't notice, because every single person who Instagrammed or Facebooked a picture, was so excited about their PR and about crushing their goal. That makes me sad for them.

Love the shirt, but I believe it's in junior size, not womens. My 8 year old niece will love it.

Other than this incident, it really was a great race. Unfortunately, feeling like they were dishonest with us marred the whole race for me.
